Beet Borsch(Serves 6) - cooking recipe
Ingredients

1 1/4 qt. water
6 medium beets, cook with 1/2-inch of tops attached, thoroughly drain
1/2 c. finely chopped onions
1 c. cabbage, shredded
1 Tbsp. vinegar
3 c. beef broth or chicken consomme
1/2 tsp. salt
dash of black pepper
Preparation

Boil or steam beets about 1 hour or until tender or pressure cook on 15 pounds pressure for 15 minutes.
Reserve liquid. Strain through cheesecloth. Set aside.
