Chicken Adobo - cooking recipe

Ingredients
    8 boneless chicken thighs (1 1/4 lb.) or equal weight in breast meat
    1 Tbsp. minced garlic
    1/4 tsp. pepper
    1/2 bay leaf
    1/4 c. white vinegar
    1/4 c. soy sauce
    1 Tbsp. vegetable oil
    2 tsp. sugar
    1 c. snow peas
    1 c. rice, cooked
    1 (15 oz.) can pineapple chunks
Preparation
    Combine chicken, garlic, pepper, bay leaf, vinegar, soy sauce, vegetable oil and sugar in 3-quart saucepan.
    Bring to a boil, stirring occasionally over medium-high heat.
    Reduce heat.
    Cover and simmer for 12 minutes, stirring occasionally.
    Transfer chicken to platter and keep warm.
    Increase heat to high and cook sauce until syrupy, about 5 minutes.
    Add snow peas.
    Arrange pineapple around chicken on platter.
    Pour sauce over chicken.
    Serve with rice.
