Italian-Sicilian Meat Balls - cooking recipe

Ingredients
    1 1/2 lb. lean chopped beef
    1 large egg
    salt and pepper to taste
    2 Tbsp. chopped fresh parsley
    1 1/2 c. bread crumbs
    1 c. diced eggplant
    3 cloves garlic, minced
    1 tsp. dried basil
    1 c. olive oil
Preparation
    In large mixing bowl place chopped meat, garlic, parsley, bread crumbs, egg, eggplant, salt and pepper.
    Make into small balls and fry in hot olive oil until brown on all sides.
    Drain on rack then place in your favorite tomato sauce and simmer 45 minutes.
    Serves 5 to 6.
