Zucchini-Nut Bread - cooking recipe
Ingredients

2 c. zucchini, grated
4 large eggs
2 c. sugar
1 c. oil
3 1/2 c. plain flour (unsifted and divided)
4 tsp. baking powder
1 1/2 tsp. salt
2 tsp. cinnamon
2 tsp. wheat germ
1 c. pecans or walnuts, chopped
1 c. raisins
1 1/2 tsp. vanilla
Preparation

Preheat oven
to
350\u00b0.
Grate zucchini; set aside.
In large bowl of electric mixer, beat eggs until thick. Gradually beat in sugar
and
oil.
In
a separate bowl, sift 3 1/4 cups flour, baking
powder,
salt
and cinnamon.
On low speed, add dry ingredients
to egg mixture alternately with zucchini and wheat germ.
