6 small potatoes
5 tsp. vegetable oil
Preparation

Preheat oven to 400\u00b0.
Clean and peel potatoes.
Cut them into quarter-inch lengthwise strips.
Soak strips in cold water for 20 minutes.
Drain potatoes and blot dry.
Spread 1 to 2 teaspoons oil on a cookie sheet.
In a bowl, coat potatoes with 2 to 4 teaspoons oil.
Place strips on a cookie sheet and bake 45 to 60 minutes or until golden brown.
