Cheesy Santa Fe Corn Muffins - cooking recipe
Ingredients

1 c flour
1 c yellow cornmeal
2 Tbsp sugar
2 12 tsp baking powder
3/4 tsp salt
1 c buttermilk
1/2 c canola oil
2 eggs, lightly beaten
1 can (4 oz) chopped green chilies, well drained
3/4 c shredded cheddar cheese
Preparation

Spray 12 muffin cups with Pam.
In a large bowl, combine flour, cornmeal, sugar, baking powder and salt.
In a another medium bowl, stir together buttermilk, oil, eggs and
chilies. Add buttermilk mixture to dry ingredients, stir to combine.
Add cheese, stir just until combined.
Spoon batter evenly into prepared muffin cups. Bake
in 350 degree oven for 15 to 20 minutes or until a toothpick inserted in center comes out clean. Cool 5 minutes on a wire rack, serve warm.
