Apricot Banana Bread - cooking recipe
Ingredients

2/3 c. shortening
1 c. sugar
2 eggs
1 1/2 c. mashed bananas (4 to 5 medium)
1 Tbsp. lemon juice
1 3/4 c. flour
1 tsp. baking soda
1 tsp. salt
1/2 c. chopped dried apricots, mixed with 1 Tbsp. flour
Preparation

In a large bowl, cream shortening and sugar.
Beat in eggs one at a time.
Blend in bananas and lemon juice.
Mix flour, baking soda and salt together.
Blend into banana mixture; stir in apricots.
Pour into greased and floured 9 x 5 x 3-inch loaf pan. Bake in 325\u00b0 oven for 1 hour and 10 to 20 minutes.
Remove from pan and cool.
