Cheddar Cheese Potato Salad - cooking recipe

Ingredients
    1/2 c. firmly packed, chopped bacon
    1 large onion, chopped
    1 1/2 lb. boiled, cooled and peeled potatoes, cut into 1/2-inch cubes
    3 large, hard-cooked eggs
    1/2 c. Cheddar cheese cubes
    1/2 c. mayonnaise
    2 tsp. mustard
    salt and pepper
Preparation
    In frying pan, cook chopped bacon over medium heat, stirring until crisp.
    Remove bacon from pan with a slotted spoon and put into a large bowl.
    Add the onion to pan and cook until limp.
    Lift out with a slotted spoon; add to bacon.
    Discard fat.
    Add potatoes, eggs, cheese, mayonnaise and mustard to the bacon and stir until evenly mixed.
    Season with salt and pepper.
    Serve or cover and chill overnight.
    Yields 6 servings.
