Cheesy Confetti Rice - cooking recipe
Ingredients

1/4 c. margarine
1 c. rice
1/4 c. chopped onion
2 1/2 c. water
1 (4 oz.) can mild green chiles, drained
1 Tbsp. chicken bouillon
1 c. (4 oz.) shredded Monterey cheese
1/4 c. sliced ripe olives
2 oz. diced pimento, drained
2 Tbsp. chopped parsley
Preparation

In a 2-quart saucepan, melt the margarine.
Add rice and onion.
Cook over medium heat, stirring, until rice is a golden color, 8 to 10 minutes.
Slowly add water, green chiles and bouillon.
Continue cooking until mixture comes to full boil (8 to 10 minutes).
Reduce heat to low.
Cover; simmer 25 to 30 minutes. Stir in remaining ingredients.
Serve immediately.
