Pumpkin Roll - cooking recipe
Ingredients

3 eggs
1 c. sugar
2/3 c. pumpkin
1 tsp. lemon juice
1 tsp. baking powder
2 tsp. cinnamon
1 tsp. ginger
1/2 tsp. nutmeg
1/2 tsp. salt
1 c. plain flour
1 c. nuts (pecans)
Preparation

Beat eggs for 5 minutes, then gradually add sugar, pumpkin and lemon juice.
Fold in dry ingredients.
Pour into greased and floured 10 x 15-inch jelly roll pan and then top with 1 cup chopped pecans.
Bake 15 minutes at
375\u00b0.
When done, turn onto towel sprinkled with powdered sugar.
Roll towel and cake up and let cool.
Unroll cake and spread with cream cheese filling.
Roll cake up again, without towel, and chill.
