Savory Baked Fillet Of Sole - cooking recipe

Ingredients
    2 lb. sole
    2 tsp. lemon juice
    dash of pepper
    6 slices bacon
    1/2 c. soft breadcrumbs
    2 Tbsp. chopped parsley
    3/4 c. thinly sliced onions
    2 Tbsp. bacon drippings
Preparation
    Preheat oven to 350\u00b0.
    Place fish on well-greased baking dish. Sprinkle with lemon juice and pepper.
    Fry bacon until crisp; drain and crumble.
    Combine bacon with breadcrumbs and parsley.
    Set aside.
    Remove all but 2 tablespoons of bacon drippings from the pan.
    Saute the onion slices until tender.
    Spread onions over fish.
    Sprinkle crumb mixture over onions.
    Bake 25 to 30 minutes. Serves 6.
