Plentiful Potato Salad - cooking recipe

Ingredients
    6 oz. cooked, diced white potatoes, peeled
    6 oz. cooked, diced sweet potatoes, peeled
    1 c. sliced celery
    1/2 c. sliced green onions
    4 tsp. olive oil
    8 tsp. dry white wine
    2 tsp. Dijon-style mustard
    1 Tbsp. tarragon flavored vinegar
    salt and pepper to taste
    2 Tbsp. chopped fresh parsley
Preparation
    Combine all ingredients in a bowl.
    Toss gently.
    Refrigerate before serving.
