Potato Candy - cooking recipe

Ingredients
    2 small potatoes, baked
    2 lb. confectioners sugar
    1 tsp. vanilla
    peanut butter (crunchy or smooth)
Preparation
    Peel potatoes; mash in a large mixing bowl.
    Add vanilla and enough sugar to make the consistency of dough.
    Roll out on wax paper.
    Spread generously with peanut butter.
    Roll into a log. Chill for several hours.
    Slice and store in refrigerator or freezer.
