Baked Eggplant - cooking recipe
Ingredients

1 eggplant
small jar Ricotta
1 whole egg
Parmesan cheese
Prosciutto or ham
salt and pepper
fresh basil
Preparation

Slice eggplant thin long ways.
Saute eggplant 30 to 45 seconds in vegetable oil.
Let cool.
Mix Ricotta, basil, salt, pepper and egg together.
Lay ham on eggplant, then add spoonful of mixture on ham.
Roll eggplant up.
Bake in 350\u00b0 oven until center is hot.
Use nonstick pan or add water to pan. Add tomato sauce on top to finish.
