Hominy Casserole - cooking recipe

Ingredients
    3 Tbsp. butter
    1 small onion, minced
    3 Tbsp. flour
    1/2 c. chopped green pepper (optional)
    1 tsp. salt
    1/2 tsp. dry mustard (optional)
    dash of pepper
    1 1/2 c. milk
    1 c. grated Cheddar cheese
    1/2 c. chopped ripe olives
    1 lb. 13 oz. can hominy, drained
    1/2 c. buttered bread crumbs
    1 lb. sausage, cooked
Preparation
    Preheat oven to 375\u00b0.
    Grease a 1 1/2-quart casserole dish. In saucepan, melt butter, add onion and bell pepper and saute 5 minutes.
    Blend in flour and seasonings; add milk and cook and stir until mixture thickens and comes to a boil.
    Add cheese and stir until melted.
    Remove from heat.
    Stir in olives, hominy and sausage.
    Pour into prepared dish.
    Sprinkle with bread crumbs. Bake 30 minutes or until well browned.
    Serves 6 to 8.
