Fruity Banana Bread - cooking recipe

vegetable cooking spray
1/3 c. margarine
3/4 c. sugar
1/2 c. egg substitute
1 3/4 c. all-purpose flour
2 3/4 tsp. baking powder
1 c. mashed bananas
3/4 c. coarsely chopped mixed dried fruit
Preparation

Coat an 8 1/2 x 4 1/2 x 3-inch loaf pan with cooking spray; set aside.
Beat margarine at medium speed with an electric mixer until margarine is creamy.
Gradually add 3/4 cup sugar, beating well.
Add egg substitute, beating until mixture is blended. Combine all-purpose flour and baking powder.
Add to butter mixture.
Beat at low speed until blended.
Stir in mashed bananas and dried fruit.
