Rice Veracruz - cooking recipe

Ingredients
    1 lb. ground beef
    1 medium onion, chopped
    1 green pepper, sliced (3/4 c.)
    1 (16 oz.) can tomatoes
    1 can condensed beef consomme
    1 tsp. salt
    1 (3 1/2 oz.) can pitted black olives, sliced
    1 c. long grain and uncooked rice
    4 oz. shredded Cheddar cheese
Preparation
    Saute beef, onions and peppers in oil in a Corning Ware dish. Stir for 5 minutes until brown and onions are tender.
    Add tomatoes, consomme, salt and 1/2 the olives.
    Bring slowly to boiling.
    Stir in rice and cook for 5 minutes, covered.
    Bake at 375\u00b0 for 20 minutes.
    Uncover, stir in cheese and olives.
    Bake 15 minutes more.
