Black Bean And Rice Salad - cooking recipe

Ingredients
    1 c. long grain rice, cooked
    1 (16 oz.) can black beans, drained
    1/4 tsp. black pepper
    1 (8 oz.) bottle Zesty Italian salad dressing
    mixed lettuce leaves
    1/2 c. shredded Cheddar cheese
    1 medium tomato, chopped
    3 green onions, sliced
    sour cream (optional)
Preparation
    Mix rice with beans, pepper and salad dressing.
    Let marinate overnight in refrigerator.
    When ready to serve, place bean mixture on lettuce leaves.
    Top with cheese, tomatoes and onion. Then a dollop of sour cream, if desired.
