Ingredients

2 eggs, beaten
1/2 c. flour
1/4 tsp. baking powder
1/2 tsp. vanilla
1 c. plus 2 1/2 Tbsp. brown sugar
dash of salt
2 c. chopped pecans
Preparation

Combine eggs
and sugar in a large mixing bowl, stirring well. Combine
flour, baking powder and salt in a small mixing bowl; add
to
egg
mixture.
Mix
well.
Stir
in
vanilla and pecans. Drop dough by heaping teaspoonfuls 3 inches apart onto aluminum foil lined cookie sheets.
Bake at 350\u00b0 for 8 minutes. Let cool completely
on cookie sheets; peel off aluminum foil. Store cookies in airtight containers.
Yields 5 dozen.
