Chicken Pizzaiola - cooking recipe

Ingredients
    2 qt. cherry tomatoes
    1/4 to 1/2 c. fresh basil
    2 cloves garlic, cut in half
    2 to 3 boneless chicken breasts, cut into 1-inch cubes
    2 Tbsp. olive oil
    3/4 c. mushrooms, sliced
Preparation
    In deep skillet or wok, heat oil on medium-high heat. Add garlic, tomatoes and basil. Saute until tomatoes are soft (5 to 7 minutes). Mash with potato masher.
    Add chicken and mushrooms. Reduce heat to simmer (medium-low to low).
    Allow to simmer until chicken is cooked through, about 10 to 15 minutes.
    Serve over rice or angel hair pasta.
    Serves 4 to 6.
