Porcupine Meatballs - cooking recipe
Ingredients

1 lb. ground beef
1/2 bell pepper, chopped
1 Tbsp. shortening
1/2 c. uncooked rice
2 1/2 c. tomato juice
1/8 tsp. pepper
1 small onion
salt and pepper to taste
Preparation

Combine beef, rice, salt and pepper in large bowl until well mixed.
Form into small balls (1 1/2-inch) and place in large baking dish.
Brown onion and bell pepper in shortening.
Add tomato juice, salt and pepper and pour over meatballs.
Cover dish with lid or foil and bake at 350\u00b0 for 1 hour.
