Enchilada Pie - cooking recipe
Ingredients

1 pkg. corn tortillas
2 cans Old El Paso enchilada sauce
2 c. pkg. shredded Cheddar or Monterey Jack cheese
1 lb. ground beef
1 small onion (optional)
2 Tbsp. oil
Preparation

Brown ground beef; chop as browning.
Add onion; drain and set aside.
Using the 2 tablespoons oil, oil all sides of a casserole dish, then layer the following:
corn tortillas, ground beef, enchilada sauce and cheese.
Repeat process until all ingredients are used, ending with the cheese (do this as if preparing lasagne). Bake at 350\u00b0 for 45 minutes (until bubbling).
Remove and let stand a few minutes before serving.
May be served with shredded lettuce and chopped tomato on the side.
Spanish rice also makes a nice accent.
Serves 6 to 8.
