Zucchini In A Flash - cooking recipe

Ingredients

4 small or 2 medium zucchini (1 lb.), washed with ends removed but not peeled
1 Tbsp. olive oil
2 garlic cloves, minced

Preparation

Coarsely grate zucchini.
In 1-quart microwave-safe casserole, combine oil and garlic.
Microwave on High 35 seconds.
Stir in zucchini and coat well.
Microwave on High for 2 1/2 to 4 minutes or until tender-crisp, stirring once.
Serves 4.
