Cappuccino Parfait - cooking recipe

Ingredients
    1 pkg. unflavored gelatin
    2 1/4 c. strong, cold coffee
    1/4 c. brown sugar
    1 c. evaporated nonfat milk
    1 tsp. vanilla
    2 Tbsp. Kahlua or other coffee flavored liqueur (optional)
Preparation
    Combine gelatin and 1/2 cup coffee in a small bowl; let stand 1 minute.
    Heat remaining coffee to a simmer in small saucepan. Add gelatin mixture and sugar to hot coffee.
    Cook over low heat, stirring constantly, until gelatin and sugar dissolve.
    Remove from heat; stir in evaporated milk and vanilla.
    Cool.
    Pour into an 8 x 8-inch pan.
    Freeze until almost frozen.
    Spoon mixture into blender or food processor.
    Add liqueur; process until smooth.
    Return to pan; freeze until firm.
    Spoon into parfait glasses; serve immediately.
    Serves 4.
