Mozzarella Salad - cooking recipe

Ingredients
    1 lb. fresh Mozzarella cheese, cubed
    3 fresh garlic cloves, minced
    10 marinated sun-dried tomatoes
    1 Tbsp. lemon juice
    3/4 to 1 c. extra virgin olive oil
    4 fresh basil leaves, chopped
    10 oz. fresh spinach, washed, dried and cut into strips
    salt
    white pepper
Preparation
    Remove tomatoes from marinade; cut into thin strips. Combine all ingredients, except spinach and olive oil, in a medium bowl. Add olive oil to cover. Marinate at least 2 hours. To serve, arrange spinach on chilled platter. Pour cheese mixture over spinach. Serves 10 to 12.
