Cucumber Salad - cooking recipe
Ingredients

5 to 6 large cukes
salt
vinegar
heavy cream
pepper to taste
Preparation

Peel, then scrape cukes lengthwise with a fork to remove acid. Slice thinly.
Make a layer of cukes in a medium to large bowl. Sprinkle very lightly with salt.
Continue layers of cukes and salt.
Press for 4 hours.
(I use a small plate and an empty bottle filled with water.)
Drain.
Cover with vinegar; press again for 2 hours.
Drain in strainer for 1/2 hour.
Mix with cream and a dash or two of pepper.
Chill and serve.
