Farmer'S Market Omelette(Serves 4 To 6) - cooking recipe

Ingredients
    4 slices bacon (may use reduced-fat bacon)
    1 medium red or green bell pepper
    1/2 c. onion, chopped
    2 potatoes, cooked and sliced
    8 eggs
    2 Tbsp. grated Parmesan cheese
    1 Tbsp. fresh parsley, chopped
    1 tsp. fresh basil, chopped or 1/4 tsp. dry leaves
Preparation
    In a large (10 or 12-inch) pan, fry bacon until crisp; drain on paper towels.
    Add pepper and onion to bacon drippings; saute until crisp-tender.
    Add potatoes and stir gently to coat.
