Shrimp Scampi D'Amour - cooking recipe

Ingredients
    2 doz. large shrimp, cleaned
    1 tsp. garlic, minced
    1 1/2 tsp. onion, minced
    1 1/2 tsp. tomato, seeded and diced
    2 Tbsp. butter
    4 oz. slivered almonds, roasted
    1 c. heavy cream
    1/8 tsp. paprika
    dash of salt and pepper
Preparation
    In a large skillet, melt butter and gently fry the garlic, onion and tomato.
    Be sure the liquid is out of pan before adding cream.
    Add heavy cream and simmer to reduce liquid to sauce consistency.
    Add almonds, paprika and salt and pepper.
    Poach the shrimp in the sauce for approximately 3 minutes.
    Stir in Amaretto and serve over fine linguine or angel hair pasta.
