North Carolina Barbecue Sauce - cooking recipe

Ingredients
    1 c. vinegar
    3/4 c. water
    2/3 c. minced onion
    1 clove garlic, crushed
    1/2 tsp. salt
    1 tsp. black pepper
    2 tsp. red pepper flakes
    1 tsp. sugar
    1 bay leaf
    2/3 tsp. thyme
    3 Tbsp. peanut oil
    3 tsp. dry mustard
    6 tsp. cold water
Preparation
    Combine all the ingredients except the dry mustard and 6 teaspoons water in a small stainless steel or enamel saucepan. Bring to a rapid boil, then simmer 5 minutes.
    Remove from heat. Dissolve the mustard in the cold water, then thin it out with some of the hot vinegar sauce.
    Stir the mustard into the sauce.
    Let cool and store in the refrigerator.
