Brown Rice Veggie Stir Fry - cooking recipe

Ingredients
    2 Tbsp. water
    2 Tbsp. light soy sauce
    1 Tbsp. olive or vegetable oil
    1 c. sliced zucchini
    1/2 c. chopped onion
    1 c. cooked brown rice
    1/4 c. diced fresh tomato
    1/4 c. grated carrot
    2 Tbsp. slivered almonds
Preparation
    In skillet, combine water, soy sauce and oil.
    Add the zucchini and onion, stir fry for 4-5 minutes or until vegetables are crisp-tender.
    Add the rice, tomato and carrot.
    Stir fry for 2-3 minutes or until heated through. sprinkle with almonds.
    Yield:
    4 servings.
