Potato Candy - cooking recipe

Ingredients
    1/4 c. boiled potatoes, cold and mashed
    1 tsp. vanilla
    confectioners sugar
    peanut butter
Preparation
    Add confectioners sugar to potatoes and vanilla to make stiff dough.
    Sprinkle board with sugar and roll dough out to about 1/4-inch thick.
    Spread with peanut butter and roll up like a jelly roll.
    Put in refrigerator until it gets hard enough to slice.
