Partlow'S Shrimp Toast - cooking recipe

Ingredients
    1/2 lb. raw shrimp
    4 water chestnuts
    2 scallions
    1 tsp. salt
    oil to fry
    1 Tbsp. cornstarch
    1 egg
    6 slices 2-day old bread
Preparation
    Mince all ingredients and combine with seasoning.
    Trim crusts from bread and spread with mixture.
    Cut bread into 4 triangles. Heat 2-inch deep oil and drop bread, shrimp-side down, into oil and brown on both sides.
    Serve hot.
    Yields 24.
