Spicy Beans And Rice(Makes 6 Servings.) - cooking recipe

Ingredients
    2 tsp. olive oil
    1 onion, chopped
    1 to 2 cloves garlic, minced
    1 small zucchini, chopped
    1 small carrot, chopped
    1 c. salsa
    1 c. cooked beans
    2 c. cooked brown rice
    1 Tbsp. chili powder
    1/4 c. grated reduce fat cheese
Preparation
    Heat a nonstick skillet.
    Add oil.
    Add onion, garlic, zucchini and carrot.
    Cook over low heat until vegetables are soft.
    Add salsa and cook 5 minutes.
    Stir in beans, rice and seasonings.
    Cook 5 minutes.
    Stir in cheese and heat until cheese melts.
    Contains 164 calories per serving.
