Pear Honey - cooking recipe
Ingredients

3 lb. ripe pears (9 c.)
1 c. crushed pineapple
grated rind and juice of 1 fresh lime
2 1/2 c. sugar
Preparation

Wash, pare and core the pears; slice before measuring.
Put through a food chopper, using the fine blade.
Combine pears and pineapple.
Add rind and juice.
Add sugar and cook over slow heat, stirring frequently.
Cook 20 minutes.
Pour into jars to within 1/4 of top.
Put on caps.
Screw bands firmly tight.
Process in boiling water bath for 10 minutes.
Yields 8 half pints.
