Zesty Zucchini Casserole - cooking recipe

Ingredients
    6 c. thinly sliced zucchini
    1/4 c. chopped onion
    1 c. cream of chicken soup
    1 c. shredded carrots, uncooked
    1 pkg. Stove Top stuffing
    1/2 c. margarine, melted
    1 c. grated cheese
Preparation
    Cook zucchini and onion in boiling water for 5 minutes; drain. Combine soup and sour cream. Stir in zucchini, onion and carrots. In separate bowl combine stuffing mix and butter. Spread half of stuffing mix in 9 x 13-inch pan.
    Spoon vegetable mixture over top, then layer of cheese.
    Sprinkle remaining stuffing mix on top.
    Bake at 350\u00b0 for 30 minutes.
