Ginger-Bake Sweet Potatoes - cooking recipe

Ingredients
    4 small sweet potatoes, cooked, cooled and sliced 1/4-inch thick
    1 c. apple juice
    2 Tbsp. finely chopped ginger root
    1 Tbsp. honey or dark sugar (or to taste)
Preparation
    Arrange the potato slices in an overlapping pattern in a 1 1/2-quart casserole.
    In a small bowl, combine the apple juice, ginger root and honey or brown sugar; and pour the mixture over the potatoes.
    Bake at 425\u00b0 until potatoes have a golden tinge and the liquid has been absorbed, 20 to 25 minutes.
    Serves 4.
