Instant Peach Pie - cooking recipe

Ingredients
    1 (9-inch) pie crust, baked
    1 (3 oz.) pkg. instant French vanilla pudding
    1 c. milk
    1 pt. sour cream
    3 ripe peaches, peeled and sliced
    1/4 tsp. almond extract
    1/4 c. apricot preserves
    2 Tbsp. water
Preparation
    Combine pudding mix, milk, sour cream and almond extract in bowl.
    Beat 1 minute with wire whisk.
    Pour into pie shell.
    Let sit until filling is set.
    Arrange peach slices on top of pie.
    In a small saucepan, heat preserves and water; stirring until mixture begins to bubble.
    Cool slightly and spoon over peaches. Refrigerate.
    Serve with whipped cream, if desired.
