Tenderloin Deluxe - cooking recipe
Ingredients

2 lb. beef tenderloin or eye of round
2 Tbsp. softened butter
1/4 c. chopped onion
2 Tbsp. butter
2 Tbsp. soy sauce
1 tsp. Dijon mustard
dash of fresh ground pepper
3/4 c. sherry
Preparation

Remove surface fat and connective tissue from meat; spread with 2 tablespoons butter.
Place on rack in shallow roasting pan. Cook 15 minutes, then baste in sauce.
Insert meat thermometer. Roast at 425\u00b0 until 140\u00b0 (rare).
For 2 to 3 pounds about 45 to 50 minutes.
