Angel Biscuits - cooking recipe

Ingredients
    1 pkg. active dry yeast
    1/4 c. warm water
    5 c. all purpose flour
    1/3 c. sugar
    3 tsp. baking powder
    2 tsp. salt
    1 tsp. baking soda
    1 c. shortening
    1-1/3 c. buttermilk
Preparation
In a small bowl, soften the yeast with the warm water and set aside.
In a large bowl, combine the flour, sugar, baking powder, salt and baking soda.
With a pastry cutter, cut in the shortening until it resembles coarse crumbs.
Add the yeast mixture and the buttermilk and stir well until combined.
On a floured board, knead about 2 minutes or until smooth, adding more flour as needed.
Roll out the dough to 1/2 inch thickness.
Using a 2-1/2 inch biscuit cutter, cut out 24 biscuits.
At this point either bake the biscuits or, for a roll-like texture, let them rise 45 minutes and then bake at 450\u00b0 for about 8 minutes.
