Horseradish Relish - cooking recipe

Ingredients
    1 1/2 c. grated horseradish (from 1 large root)
    3/4 c. white vinegar
    1/4 tsp. salt
Preparation
    Wash the horseradish well, then peel off all brown skin using a vegetable peeler.
    Grate or chop enough of horseradish to equal 1 1/2 cups.
    Mix with the rest of ingredients.
    Pack into jars, store in refrigerator and let mellow for 2 weeks.
