Evelyn'S Fruit Cookies(Better Than Fruit Cake!) - cooking recipe

Ingredients
    about 15 oz. seedless golden raisins
    about 1 lb. dates, chopped
    about 5 oz. currants
    about 1 lb. dried apricots, finely chopped
    1 c. or so chopped nuts (walnuts, pecans or whatever you prefer or a mixture of many types)
    1 large can (25 to 29 oz.) crushed pineapple
    1 large jar (about 16 oz.) maraschino cherries, chopped
    2/3 c. unsalted butter
    2 c. sugar
    3 eggs, separated
    1 tsp. baking soda
    6 Tbsp. cream (canned, heavy or half and half)
    3 1/2 c. flour
    1/2 tsp. salt
Preparation
    Option:
    Cut down on the raisins and currants and use chopped dried peaches, apples, prunes and even dried cherries.
