Mashed Potato Candy - cooking recipe

Ingredients
    1 small potato
    1 lb. box powdered sugar
    1 c. peanut butter
Preparation
    Peel and quarter potato.
    Boil in small saucepan as for mashed potatoes.
    When tender, remove from stove; drain off water and mash potato with a fork.
    Pour in enough powdered sugar to make dough like.
    Remove mixture and place on flat powdered sugar surface to roll with a rolling pin.
    Roll into a thin rectangle. Spread peanut butter on top of rectangle and roll dough jelly roll style, starting at narrow end.
    Slice into pieces 1/2-inch wide. Let stand until dry.
    Amount will vary, depending on size of potato and thickness of slices.
