"My Mama'S" Elderberry Wine - cooking recipe

Ingredients
    elderberries, stemmed
    2 gal. boiling water (for every gal. of elderberries after they are stemmed)
    3 1/2 lb. cane sugar (for every gal. of liquid)
    1 oz. ginger (for every gal. of liquid)
    1/4 oz. cinnamon (for every gal. of liquid)
    1/4 oz. cloves (for every gal. of liquid)
    slice of toast
    1 cake yeast
Preparation
    Add water to elderberries.
    Let stand 2 days. Boil until soft, then strain through a sieve. To every gallon of liquid, add the sugar, ginger, cinnamon and cloves.
    Boil for 20 minutes.
    Cool. When nearly cold, spread a slice of toast with yeast and float on top of liquid.
    Let stand 3 to 4 days.
    Skim and let stand in keg or crock until through fermenting. Bottle, but \"do not\" cork too tightly.
