Ingredients

2 c. all-purpose flour
2 Tbsp. sugar
1 Tbsp. baking powder
1/2 tsp. salt (optional)
1 1/2 tsp. nutmeg
2 eggs, separated
1 3/4 c. milk
6 Tbsp. vegetable oil or melted butter
Preparation

Preheat waffle iron according to manufacturer's directions. Mix flour, sugar, baking powder, nutmeg and salt into a bowl. Combine egg yolks, milk and oil.
Pour into flour mixture and beat with a rotary beater or electric mixer just until smooth.
Beat egg whites until soft peaks form and fold into batter.
Pour batter into greased waffle iron and bake as manufacturer directs. Serve with butter, maple syrup or fruit topping.
