Icebox Cheesecake - cooking recipe
Ingredients

1 box lemon Jell-O
1 c. hot water
3/4 c. sugar
1 lemon
1 tsp. grated lemon rind
1/2 tsp. vanilla
1 (8 oz.) pkg. cream cheese, softened
1 large can evaporated milk, chilled
4 to 5 Tbsp. melted butter
20 to 24 graham crackers
Preparation

Mix Jell-O, hot water and 1/2 cup sugar. Chill in refrigerator until partially congealed. Mix 1/4 cup sugar, vanilla, juice of 1 lemon and grated lemon rind (or 1/4 cup lemon juice) with 1 package cream cheese. Chill and whip evaporated milk. Add Jell-O mixture and beat. Add cream cheese mixture.
