Ingredients

1 1/2 c. sugar
2 Tbsp. all-purpose flour
3 large eggs
1/4 c. margarine, melted
1/2 c. buttermilk
1 tsp. vanilla
1 (3 1/2 oz.) can coconut, divided
1 unbaked 9-inch pie shell
Preparation

Combine sugar and flour; set aside.
Combine eggs and the next 3 ingredients.
Add sugar mixture, stirring well.
Stir in 2/3 cup coconut; pour into pie shell.
Bake at 325\u00b0 for 30 minutes. Sprinkle with remaining coconut.
Shield edges of pastry with aluminum foil to prevent overbrowning.
Bake an additional 30 minutes, or until set.
