Ingredients

1 lb. carrots, grated
2 medium lemons, seeded and grated
3 3/4 c. sugar
1/2 tsp. salt
1/2 c. water
a few fresh mint sprigs
Preparation

Put carrots, lemon, sugar, salt and water in a large kettle and bring to a boil.
Cook over medium heat for 10 -15 minutes. Add mint and cook 5 minutes more.
Pour into hot sterilized jelly glasses and seal at once.
Really good stuff not only is this good on muffins or biscuits but makes a great glaze on pork or lamb chops.
