Baked Eggplant - cooking recipe
Ingredients

1 medium-size eggplant
1 c. cracker crumbs
3 strips bacon
3 eggs
salt and pepper
2 Tbsp. butter or margarine
Preparation

Peel, dice and boil eggplant until tender.
Drain; mash slightly with a fork or potato masher.
Add seasonings to taste, eggs, butter and crumbs.
Mix well and pour into generously greased casserole dish.
Lay bacon strips on top.
Bake in a 300\u00b0 oven for 35 minutes, or until lightly browned on top.
