Fried Green Tomatoes - cooking recipe

Ingredients
    1 c. cornmeal
    1/2 c. flour
    1 Tbsp. sugar
    4 to 5 (2 lb.) green tomatoes, sliced 1/2-inch thick
    oil or solid shortening
    salt and pepper
Preparation
    Mix together cornmeal, flour and sugar in shallow bowl. Dredge both sides of tomatoes in mixture.
    Press slices firmly into meal to coat thoroughly.
    Pour about 1/4 inch oil in cast-iron skillet and heat.
    Add tomatoes a few at a time without crowding and fry about 2 minutes.
    Drain on paper towels and season to taste with salt and pepper.
    Serve hot.
    Makes 4 servings.
