Cauliflower Casserole - cooking recipe

1 medium head cauliflower, broken into florets
1 c. sour cream
1 c. shredded Cheddar cheese
1/2 c. crushed cornflakes
1/4 c. chopped green pepper
1/4 c. chopped sweet red pepper
1 tsp. salt
1/4 c. grated Parmesan cheese

Preparation

Place cauliflower and a small amount of water in a saucepan; cover and cook for 5 minutes or until crisp-tender. Drain. Combine cauliflower, sour cream, Cheddar cheese, cornflakes, peppers and salt; transfer to a greased 2-quart baking dish. Sprinkle with Parmesan cheese and paprika. Bake, uncovered, at 325\u00b0 for 30 to 35 minutes or until heated through. Yields 6 to 8 servings.
